How? By inhibiting the expression of lipogenic genes for fat synthesis, via activating AMPK - fasting activates this same pathway!!
🔬REDUCES THE GI OF FOOD:
Sugiyama and colleagues documented that the addition of vinegar to foods such as rice (eg, sushi) decreased the GI of by 20% to 35% (Sugiyama et al., 2003). A lower GI can translate to greater blood sugar control and less insulin spikes!
